Thanks for posting your question.
The SiteOrigin Image Grid layout is controlled via the following two settings:
Maximum Image Height
Maximum Image Width
For interest’s sake, the grid seen here https://layouts.siteorigin.com/layout/mono/ uses the following settings:
Image Size: Medium
Maximum Image Height: 300px
Maximum Image Width: 300px
Image Padding: 10px
Image Vertical Alignment: Center
Grid Horizontal Alignment: Center
The SiteOrigin Image Grid Widget doesn’t currently use a column count system. I’m sorry, but I can’t help there at the moment. I’ll certainly forward your feedback and request.

For a gallery-focused option with a grid count, you could consider the SiteOrigin Simple Masonry Widget, which has a Column Count for Desktop, Tablet, and Mobile.
