Is there any way to configure the Post Carousel so it displays a simple Title / Date / Excerpt? I just want something to post the last few posts in a “news” style on my home page without having to attach an image to each one. It seems like such a simple thing, but I can’t find any 3rd party plugins that do it well.

Unfortunately, this isn’t possible at this time. Sorry mate. :(
Consider using the Livemesh Post Carousel (search for Post Carousel to find it – sorry about that!) included in the Livemesh SiteOrigin Widgets bundle (which is a third party plugin). Once installed, please navigate to WP AdminPluginsSiteOrigin Widgets and activate the Livemesh Post Carousel. Then add it as you would any normal widget.
