At the moment my menu is mainly Categories to catch the different posts. I want to set up a Page for each category so that I can set up the posts differently on each page if necessary and have a description of the posts which will be static at the top of the page. Also I can put a gallery of pictures, or slider at the bottom of the page, for instance tent pictures on the Camping page. I only want posts of that category on that page though. Is it simple ?

You can do this by adding a post loop widget to your page. The post loop widget will allow you to output a series of posts (based on your criteria) and it’ll do it in the same method as your theme (if it allows).
Please open the post loop widget and then open the Posts Query settings group. Type the name of the category into the Taxonomies field and select it when it shows up. Now only posts from that category will be output.
