I want to remove “posted by” in my blog. I would like to keep the date but remove the author.

Hi. Please head to Appearance > Theme Settings > Blog: Post Author, un-tick that checkbox.

Oh, that was easy. Is there a way to add in what category the post in in just beside the date?

Unfortunately not without custom development. The category does appear at the end of the post though.
