I’m complete new to wordpress and my question will seem stupid and basic but bear with me please. If you go to this site http://seashoreeast.com/ and you click on the products menu, or in the menu the “All” link. It takes you to a page that is not in the pages menu under the dashboard. It seems that this page is been made on the fly getting the information from a Products category also in the dashboard. I see how the products menu is constructed, i was able to switch things around and change words, but i’m drawing a blank as how the page is made.

It’s hard to say without logging into WordPress and probably also taking a look at the theme files. Are you able to reach out to the developers of this website or perhaps the theme authors if it was built with a commercially available or free theme?
But yes, it’s an archive page so it’ll be automatically pulling information. I can’t tell if this is a custom setup or if it’s using a plugin. If you’re using WooCommerce for example, there are settings to control the archive and shop page layouts.
