I changed from the “Keynote” theme to the “Sydney” theme. All of the content made on pagebuilder has ‘disappeared’ (if I change back to the keynote theme, it reappears). Is there anyway to make it show on the new theme, or do I have to make everything from scratch again?

Were the widgets used in Keynote specific to the theme? That’s the only reason I can think of for theme level content loss. If the widgets are specific to the theme, you’ll lose the widgets when you switch away from the theme.
I assumed it is the same sort of page builder, but it is set out differently in the different themes. If it is theme level loss, is there any way to recover any of it on the new theme, without having to start everything again from scratch on every page?
If you’re using Page Builder by SiteOrigin it should be our Page Builder with the same interface regardless of the theme in use. What can change are the widgets. Perhaps try temporarily switching back, what are the names of the widgets that contain your content?
It is definitely the pagebuilder in which the content is being held. The only difference between the themes, is that the pagebuilder is below the “content box” where it says “page builder options” and a section for content. See attached images

The content and interface displayed in Page Builder Section isn’t created by SiteOrigin. I haven’t seen that interface before. To establish whether you can migrate that content, you’d need to chat to the developers of that interface. If that interface is added by your previous theme then it would be best to chat to the theme authors. I’m not sure if those are widgets or how the content would be migrated or if it can be migrated.
