PHP version 7.4.33 needs an Update, but 8.0+ throws fatal error

Please advise — the site: ericnykamp.art shows that it is Recommended to receive a PHP Update. But any change to the version in use (all 8.0 and higher) results in a “fatal error” message/warning.
Thoughts? Known issues? Known conflicts with Plugins perhaps?

    It would be best to enable debugging and then check the debug log file after upgrading the PHP version. That’ll let you know exactly what the issue is.
