Is there a way to limit the amount of tags shown under a post?
And if so, will doing this impact SEO in any way?
I want to keep my post tags, but for appearance sake, I don’t want but so many tags to show under my posts.

You’ll need to use a plugin to do this. There aren’t many plugins that do this, WP Limit Tags is your only real option. Personally, I recommend not setting many tags for SEO reasons and I would limit them when editing the post directly rather than using a plugin.
