Do you know how I can solve this without messing around with the html code in the text edit?

You could perhaps try a plugin like https://wordpress.org/plugins/show-hidecollapse-expand/. There are a few others to choose from that do a similar job.

Yes, it should. You can use it inside an Editor Widget.
The problem is that inside the PageBuilder text widget I used to build my page I basically dont have a text editor (beside regular-bold options). I can only see a visual / html switch and a couple of other options, so no regular wordpress editor
(which, if Im not wrong, actually includes a read more option to select).

The more option there refers to splitting a post on archive pages. You click the Read More link and get directed to the single post.
