I am involved with an organization that is using the Vantage theme for their website and wish to use WordPress’s Gutenberg block editor instead of the Page Builder built into the Vantage Theme. How can this be done?

You can indeed. Page Builder isn’t built into Vantage, you can use it or not, it’s up to you. Page Builder and the SiteOrigin Widgets Bundle can also be used within the Block Editor via the SiteOrigin Layout and SiteOrigin Widget Blocks. In the near future the SiteOrigin Widgets Block will split into individual blocks that you can use as required in the Block Editor.
If you have the Classic Editor plugin activated, you can start by deactivating it. At PagesAll Pages click the Drop Down arrow to the right of Add New and select Block Editor to create a new Block Editor page or at SettingsPage BuilderGeneral deactivated Use Classic Editor for New Posts before adding a new page.
