Is it possible to adjust the layout for breakpoints/device dimensions in Page Builder? If yes, how would I do this?

Hi Chad,
Kind of. Please navigate to WP Admin > Settings > Page Builder and open the layout tab. Adjust the mobile width.
I also would recommend installing the the excellent Widgets for SiteOrigin plugin will allow you to “hide” widgets at specific screen sizes (looks to be based on Chrome DevTools sizing) via the visibility functionality,
