Am trying to change the amount of content displayed per post when in a category view (the excerpt?), for instance:

Have tried various pieces of code from other forum posts in various places, including plugins, but to no avail.
Am I missing something, or is this a fairly difficult thing to achieve?

Vantage unfortunately doesn’t have an excerpt length option. You can however set Appearance > Theme Settings > Blog > Post Content to Full Content and then use the More tag:

Hi Andrew, thanks for getting back to me.
Although that would achieve what I’m looking for, it may be a bit much for the client to keep up along with the rest of the site updates.
Is there a way to just show the titles of the post, and no content, until the user clicks through to read the full article?

Sure. If Appearance > Theme Settings > Blog > Post Content: is set to Post Excerpt then an automatic excerpt will be taken, it should be quite short. Can you check this setting is set correctly.
