I managed to lose all my old blog site (I was messing with domains on my website server, nothing to do with Pitch theme!).
I want to put the posts back but with the dates they were created, not use the default. Is there a way of doing this? (an easy way, for numpties without any PHP experience).

Sorry to hear you had this issue. In the future consider Duplicator for your backups and moves: https://wordpress.org/plugins/duplicator/.
How are you currently doing the restore? From a database backup or via a XML backup (Tools > Export).
It was my own fault for not making a backup. I’m actually having to restore from my own word documents – my old site was on WordPress, not my own web domain, so I’ve no idea where it went to!
Will definitely check out Duplicator as I now have several blogs on the go and don’t want to lose them.
Is there any way of making the date a manual input for this blog? I want to put the (approximate) dates the blog posts related to…..

You can change the published date of each post in the top right corner. Is that your question?
